Peppermint Bark


Growing up, peppermint bark was never a staple in our house for the holidays, but in the last year or so I've become obsessed! As a huge chocolate lover, it's really no surprise it's become a holiday favorite and I love that it only requires a few ingredients to make. Whether added to a tray of Christmas cookies or packaged in cello bags for quick gifts, you really can't go wrong. 

As with most classic recipes, I came across several variations for making peppermint bark, each with varying amounts of peppermint extract, different types of chocolate and various methods for creating the perfect confection. While I'm no baking expert (my batch of peppermint bark went straight into the trash last year!), I have found that using high quality chocolate, the right amount of peppermint extract and not over-heating your chocolate are important factors when making this treat. With that said, I splurged on higher quality chocolate (not chocolate chips), slowly melted my chocolate with short 30-second bursts in the microwave and found this recipe which uses the perfect amount (in my opinion) of peppermint extract. Lastly, I also added edible gold star sprinkles to add a hint of sparkle!
