Raspberry Almond Butter Smoothie Bowl


I'm not quite sure when 'smoothie bowls' became a thing, but they have been popping up all over the internet for the last couple years and so I decided it was time to give one a try! If you're new to the idea, it's basically just a smoothie served in a bowl and topped with fresh fruit, granola, nuts or really whatever you have on hand. I used this recipe for inspiration and modified it slightly based on what I already had in my fridge. Also, if you prefer a thicker consistency for your smoothies like I do, then be sure to use all frozen fruit. (I always keep a few frozen bananas in my freezer!)

INGREDIENTS
1 large frozen banana
1 ½ cups frozen raspberries
½ cup unsweetened vanilla almond milk
½ cup ice
2 Tbsp. almond butter
1 Tbsp. honey, plus additional for drizzling
¼ cup granola
2 Tbsp. shredded coconut

PREPARATION
Blend the banana, 1 cup of the raspberries, almond milk, ice, almond butter, and 1 tablespoon of the honey until smooth. Transfer to a bowl and top with the granola, coconut, remaining ½ cup raspberries, and a drizzle of honey.
