Cranberry Coconut Energy Bites


With the holidays just around the corner, there is already an abundance of sweets floating around the office making it nearly impossible not to snag a cookie or two throughout the day. While I’m certainly not complaining, I try to keep healthier alternatives on-hand to avoid overindulging in whatever is in the conference room. These energy bites are the perfect way to satisfy your sweet tooth without feeling like you’ve missed out. Honestly, they hardly taste healthy at all, so it might be difficult to limit yourself to just one!


INGREDIENTS:

1/3 cup old-fashioned oats
1/3 cup peanut butter
1/4 cup honey
1 scoop vanilla protein powder (approximately 2 Tbs.)
1/2 tsp. vanilla extract
Dash of salt
1/4 cup dried cranberries
1/4 cup sunflower seeds
1/4 cup shredded coconut, plus more for topping (I used unsweetened)

1. In a medium bowl combine the oats, peanut butter, honey, protein powder, vanilla extract and salt. Mix well creating a thick "dough".

2. Add the cranberries, sunflower seeds and coconut. Mix to combine.

3. Pour approximately 1/2 cup shredded coconut into a shallow dish or small bowl. Divide the peanut butter mixture into 1" balls, rolling each in shredded coconut and placing in a parchment paper lined tupperware container.

4. Chill finished energy bites in the fridge for an hour or two until firm. Energy bites can be stored in an airtight container in the fridge for up to one week.
